Finally a Cookie to Write Home About!!

....Here is what you will need: cookie mix (in the bowl), Canola oil, water, and 2 eggs...
This is what you will not need..... all of those flours, baking soda, sugars, vanilla, measuring cups, etc......mess..... need I say more?

Okay here we go.....Dive in wet ingredients, canola oil, water and eggs! Why Canola oil and not butter or vegetable you ask? Well, the benefits of Canola oil are Omega 3 fatty acids (not in vegatable oil), mono/poly unsaturated fats - almost no saturated fats (which are at a higher level in vegatable oil and certainly butter), thus better for the triglyceride levels and waist-line!



See the empty mixing bowl to the left? The mix couldn't wait to join in the fun! Here is what the consistency should look like after addition of the mix to the wet ingredients. A bit crumbly, but all of the wet mixture should be soaked up nicely to form your cookie dough.


a heaping tablespoon is all you need to get a good batch of 24, or 16 cookies + "something else" that you will see toward the end of the cookie blog...




Here we go boys, into a 350 degree oven for 14-16 minutes until golden brown around the edges and no less!




Oh me, oh my chocolate eyes!! Look at those cookies! See those triangular pieces in front? This is the "something else" I was telling you about with a topping of oatmeal/raw sugar/cinnamon mixture. How do you do this? Just press the left over dough into an 8inch cake pan (greased) and bake away. Two different tastes for the price of one...what could be sweeter! But wait what is that lerking in the right hand corner next to the cookies? Could it be a banana chocolate chip quick bread popping into the picutre..............................little rascal..................stay tuned for her debut next!
